- 1 onion
- 1 Garlic clove
- 2 tbsp olive oil
- 350 g mixed ground meat
- 2 tbsp Tomato paste
- 150 ml dry red wine
- 100 ml Vegetable broth
- 500 g tomatoes (pureed)
- 1 tsp Dried oregano
- Salt
- Pepper (freshly ground)
- 100 g kidney beans
- 3 tomatoes
- 1 ripe Avocado
- 1 splash lime juice
- 500 g spaghetti
- 100 g Sour cream
- 75 g freshly grated parmesan
- 1 tbsp fresh coriander leaves

Peel and finely chop the onion and garlic. Heat oil in a pot and sauté until translucent. Add ground meat, breaking it up, then stir in tomato paste. Deglaze with wine and broth. Mix in tomatoes, oregano, salt, and pepper. Simmer over medium heat for 20-25 minutes. Drain kidney beans, add to the sauce, and cook another 5 minutes.

Meanwhile, blanch tomatoes for 1-2 minutes in boiling water, remove with a slotted spoon, peel under running water, then dice. Peel, pit, and cube the avocado. Combine both in a bowl and drizzle with lime juice. Cook spaghetti in salted boiling water until al dente, drain, and place on warmed plates. Top with meat sauce, a dollop of sour cream, and tomato-avocado salsa. Garnish with Parmesan and fresh coriander leaves.
