Pasta with Green Beans

Ingredients

  • 400 g young green beans
  • Salt
  • 500 g spaghetti
  • 1 onion
  • 1 tbsp plant oil
  • 100 ml Vegetable broth
  • 150 ml Heavy Cream
  • 80 g freshly grated Parmesan
  • pepper (ground)
  • 2 tbsp coarsely chopped parsley

Instructions

    Wash, trim, and blanch the beans in salted water for about 6 minutes. Shock in cold water, drain well, and cut into 3–4 cm pieces.

    Cook the pasta in salted water until al dente.

    Peel and finely dice the onion. Sauté in hot oil in a pan until translucent. Deglaze with broth and cream, simmer gently for 4–5 minutes until slightly thickened. Add the beans to the sauce and heat through. Stir in half of the parmesan and season with salt and pepper. Toss the drained pasta with parsley and divide onto plates.
