Pasta with Glazed Onions, Sun-Dried Tomatoes, Olives and Feta

Ingredients
- 250 g short tube pasta
- 4 red onions
- 4 tbsp olive oil
- 0.5 tsp Sugar
- 150 g sun‑dried pickled tomatoes (drained)
- 2 tbsp capers
- 200 g feta
- 0.5 tsp Salt
- 0.5 tsp liquid honey
- 2 tbsp lemon juice
- 1 tbsp White Wine Vinegar
- 1 tsp Mustard
- parsley (for garnish)
Instructions

Cook the pasta according to package instructions in plenty of salted water until al dente, drain, rinse with cold water and let cool.

Peel the onions and slice into strips. Sauté in 2 tbsp olive oil, sprinkle with sugar and caramelize, then allow to cool.

Drain the tomatoes and cut into pieces. Drain the capers as well. Cut the feta into 1 cm cubes. Toss pasta, onions, capers, feta and tomatoes together loosely.

Whisk together salt, honey, lemon juice, vinegar, mustard and remaining oil to make a dressing. Toss the salad with the dressing. Serve garnished with parsley.
