Pasta with Fried Sardines

Ingredients

  • 2 bulbs fennel
  • 3 tbsp olive oil
  • Salt
  • Pepper
  • 150 ml dry white wine
  • 100 g raisins
  • 350 g bucatini
  • 12 sardines (pre-cooked)
  • 2 tbsp flour

Instructions

    Wash, trim, and cut the fennel into strips. Set aside the fennel fronds for garnish. Sauté the fennel in 1 tbsp hot oil in a pan for 2-3 minutes until golden brown, season with salt and pepper, then deglaze with wine. Sprinkle in raisins and simmer gently for about 8 minutes.

    Cook the pasta in salted water to al dente.

    Rinse the sardines, pat dry, and season with salt and pepper. Dredge in flour, tap off excess, and fry in remaining oil for 4-5 minutes until golden brown.

    Toss drained pasta with the fennel mixture, adjust seasoning with salt and pepper, fold in the fried sardines, and serve on plates garnished with fennel fronds.
