Ingredients
- 200 g Chinese egg noodles
- Salt
- 1 bunch scallions
- 250 g frozen shrimp
- 1 l vegetable broth
- 50 ml Soy sauce
- juice of one lemon
- 1 tsp Sambal oelek
- 2 tbsp mango chutney
- 1 ripe mango (diced)
- 2 tbsp chives rolls
- Salt
- pepper (ground)
- lime wedges and zest
Instructions

Cook the noodles according to package instructions until al dente, drain and set aside.

Trim, wash and cut scallions into 5 cm long, very fine strips.

Heat vegetable broth in a pot, add scallion strips, shrimp and noodles, bring to a boil and simmer for a few minutes; season with soy sauce, lemon juice, Sambal oelek, mango chutney, salt and pepper.

Serve the noodle pot with mango cubes, chives, lime wedges and zest.
