Pasta with Duck

Ingredients
- 2 duck breast fillets (about 300 g each)
- Salt
- Pepper
- 400 g tagliatelle
- 200 g mushrooms (e.g., porcini)
- 4 Spring Onions
- 1 Tbsp freshly chopped thyme
- fresh grated parmesan for garnish

Rinse the duck breasts, pat dry and score the skin in a diamond pattern. Season with salt and pepper and cook skin side down in a hot pan about 10 minutes until slowly golden brown. Baste the breast with rendered fat during cooking. Flip and finish on the meat side over low heat for about 5 more minutes to reach pink center.

Cook the pasta in salted water al dente.

Clean the mushrooms and slice them. Wash, trim, and cut the spring onions into rings. Sauté together with the mushrooms in 1 tbsp hot duck fat in another pan for 2-3 minutes. Season with salt and pepper, then toss the drained pasta (add a splash of pasta cooking water if desired) with thyme. Finally add the sliced duck breast and plate. Sprinkle with parmesan before serving.
