Pasta with Chicken Strips and Mirabelle Plums

Ingredients

  • 400 g chicken breast fillet
  • 250 g red mirabelle plums
  • 1 Shallot
  • 1 Organic lemon
  • 2 tbsp plant oil
  • Salt
  • Pepper
  • 30 g pine nuts (2 tbsp)
  • 1 tbsp liquid honey
  • 200 ml poultry stock
  • 400 g whole grain tagliatelle
  • 1 tsp Sichuan pepper

Instructions

    Rinse the chicken under cold water, pat dry and cut into strips. Wash the mirabelle plums, halve them, remove stems and stones. Peel the shallot and finely dice it. Rinse the lemon hot, pat dry and zest its peel. Squeeze out the juice.

    Heat oil in a pan and brown the chicken over medium heat until golden brown. Season with salt and pepper and remove from the pan. Add the shallot and pine nuts to the pan and lightly brown them over medium heat. Add the mirabelle plums, drizzle with honey and let them caramelize slightly. Add lemon zest, juice and poultry stock, season with salt and pepper and simmer for about 5 minutes over low heat.

    Meanwhile cook the pasta according to package instructions in boiling salted water until al dente. Crush Sichuan peppercorns in a mortar.

    Season the sauce with crushed Sichuan pepper. Mix the chicken into the sauce and let it thicken for 2–3 minutes. Drain the pasta and divide onto four plates. Sprinkle the mirabelle mixture over the pasta and serve immediately.
