Ingredients

  • 400 g Tomatoes
  • 1 onion
  • 2 Garlic cloves
  • 15 g ginger
  • 2 dried red chilies
  • 1 tsp cumin seeds
  • 1 tsp coriander seeds
  • 400 g lamb meat (e.g., shoulder)
  • 4 tbsp ghee
  • 200 ml beef broth
  • Salt
  • 1 red bell pepper
  • 600 g mixed mushrooms (e.g., button, oyster, shiitake)
  • 125 g peas (frozen)
  • 200 ml coconut milk
  • paprika or chili powder for garnish

Instructions

    Boil the tomatoes, cool, peel, remove stems and seeds, dice. Peel onion, garlic, ginger. Finely chop onion and garlic, grate ginger. Crush chilies with cumin and coriander in a mortar. Wash lamb, pat dry, cut into bite‑sized pieces.

    Heat ghee in a large pot, add onions, sauté 5 minutes until light brown. Add garlic, ginger, spice mix, cook 1–2 minutes. Add lamb, stir with spices, brown lightly. Add tomatoes and broth, season with salt, cover and simmer 1 hour on low heat, stirring occasionally.
