Ingredients
- 1 EL cumin
- 0.5 TL allspice berries
- 1 spice clove
- 1 TL dried marjoram
- Salt
- 1 TL peppercorns
- 1.2 kg pork loin steak (whole, ready to cook)
- 2 EL vegetable oil
- 200 ml meat stock
- 400 g waxy potatoes
- 300 g pumpkin flesh (e.g., muskmelon)
- pepper (ground)
- 1 EL freshly chopped parsley
Instructions

Preheat the oven to 180°C fan and conventional heat.

Crush the spices with marjoram, salt and pepper in a mortar.

Wash the meat, pat dry, rub all over with the spice mix and sear in hot oil in a roasting pan. Turn so fat side up and roast in preheated oven for about 1½ hours, occasionally spooning stock over it.

Peel, wash potatoes and combine with pumpkin flesh.

After half the cooking time, arrange vegetables around the meat, season, pepper and stir occasionally. In the last 10 minutes raise the oven to 220°C fan heat and brown the crust.

Mix vegetables with parsley, plate alongside the roast and serve.
