Pasta with Beef and Mushroom Sauce

Ingredients
- 8 tomatoes
- 1 onion
- 1 Garlic clove
- 2 tbsp olive oil
- 150 g Mushrooms
- 500 g ground beef (beef)
- 1 tbsp Tomato Paste
- 250 ml rich meat broth
- Salt
- a pinch of sugar
- black pepper (ground)
- 400 g spaghetti
- 30 g heavy cream
- 3 tbsp coarsely chopped parsley
- 40 g grated Parmesan

Blanch the tomatoes, cool them in ice water, peel, quarter, seed and dice. Peel and finely dice the onion and garlic. Clean the mushrooms thoroughly and slice them. Brown the ground beef in hot oil in a pot while stirring until crumbly and lightly browned. Add the onions, garlic and mushrooms and let them sauté for another 2-3 minutes. Stir in the tomato paste and pour in the meat broth. Season with salt, sugar and pepper and fold in the tomatoes. Simmer covered for about 45 minutes, stirring occasionally, adding more broth if needed.

Cook the pasta in boiling salted water until al dente.

Finish the sauce with cream and adjust seasoning. Drain the pasta well. Plate the pasta with the sauce, sprinkle with parsley and Parmesan, and serve.
