Ingredients

  • 800 g sea bass fillet
  • 1 bundle mint
  • 2 lemons
  • Salt
  • Pepper (freshly ground)
  • 2 red bell peppers
  • 16 small button mushrooms or champignons
  • 6 tbsp Olive oil

Instructions

    Wash the fish fillets, pat dry and cut into 24 equal cubes. Wash and chop the mint, then mix with lemon juice, salt and pepper. Marinate the fish cubes in this mixture for 1 hour.

    Wash the bell peppers, trim them, halve, seed, remove white membranes and cut into ~3 cm squares; blanch in boiling salted water for about 2 minutes. Clean the mushrooms. Alternate threading fish cubes, bell pepper squares and mushrooms onto skewers. Fry the skewers in hot olive oil for about 8 minutes until golden.
