Pasta with Bacon

Ingredients

  • 100 g thick-cut bacon
  • 100 g freshly grated Parmesan
  • 0.5 bunch chives (cut into small rolls)
  • 3 tbsp heavy cream (at least 30% fat content)
  • 3 eggs
  • 400 g spaghetti
  • 2 tbsp oil
  • 2 Garlic cloves
  • Salt
  • black pepper (freshly ground)

    1. COOK SPAGHETTI

    Cook spaghetti in plenty of salted water until al dente.

    2. FRY BACON

    Cut bacon into small cubes. In a large pan, slowly fry with 2 tbsp oil over gentle heat. Remove crispy bacon cubes from the pan.

    Whisk eggs, cream, salt and pepper together with a whisk. Stir in 50 g parmesan and chives. Peel and finely chop garlic cloves; gently sauté in the bacon fat. Drain spaghetti, let it dry well, then immediately add to the pan. Toss thoroughly in the bacon fat, then remove the pan from heat. Pour the egg mixture over and quickly stir into the hot noodles. Sprinkle crispy bacon cubes on top, season with plenty of freshly ground pepper. Serve extra parmesan on the side.
