Pasta with Artichoke Hearts and Smoked Salmon

Ingredients
- 400 g frozen artichoke hearts
- 400 g penne pasta
- Salt
- 200 g smoked salmon
- 1 handful flat-leaf parsley
- 2 tbsp butter
- 2 tbsp olive oil
- 150 ml Vegetable broth
- 100 ml heavy cream
- 150 ml crème fraîche
- Pepper (freshly ground)
- 0.5 lemon (juiced)
- Lemon slices (for garnish)

Instructions

Let the artichoke hearts thaw and cut them into strips.

Cook the pasta in plenty of salted water until al dente, drain and set aside.

Slice the salmon into strips, wash the parsley, shake dry and chop.

Heat butter and olive oil in a large pan. Sauté the artichokes, deglaze with broth, and simmer over medium heat until liquid evaporates. Stir in cream and crème fraîche. Season with salt, pepper, and lemon juice, adding a little more salt as the smoked salmon releases salt. Bring to a gentle boil.

Toss the pasta and parsley with the pan mixture, then add the salmon, stir briefly, and immediately serve on plates. Garnish with lemon slices and parsley.
