Ingredients
- 1 onion
- 2 Garlic cloves
- 1 ripe tomato
- 2 yellow bell peppers
- 1 Zucchini
- 1 small eggplant
- 50 ml olive oil
- Salt
- Pepper
- Cayenne pepper
- 1 tsp cardamom
- a pinch piment
- 1 tsp cinnamon
- 100 ml Vegetable broth

Peel and finely chop the onion and garlic. Boil the tomatoes, peel, halve, core, and roughly dice the flesh. Wash, trim, and cut the bell peppers and zucchini into 3 cm cubes. Wash the eggplant, trim ends, and cut into bite‑size pieces.

Heat oil in a pan and sauté onions and garlic. Add vegetables and cook together for about 5 minutes while stirring. Season with salt, pepper, cayenne, cardamom, piment, and cinnamon. Pour in broth and simmer gently until al dente, stirring occasionally to prevent sticking.
