Ingredients

  • 90 g almond flakes
  • 1 slice of toast bread
  • 1 pot basil
  • 1 bunch parsley
  • 1 Garlic clove
  • 500 g pasta
  • Salt
  • 50 g freshly grated Parmesan
  • 8 tbsp olive oil
  • black pepper

Instructions

    Cook the pasta in boiling salted water until al dente. Briefly toast the almonds in a dry pan without fat. Set aside about 10 g for garnish, and put the rest into a blender with the crumbled toast bread. Wash, shake dry, finely chop the basil and parsley, and add them to the blender as well. Peel the garlic, press it through a press, and add it too.

    Add the Parmesan and olive oil to the almond-herb mixture, pour in 2-3 tbsp of pasta cooking water, and blend into a creamy pesto. Season with pepper, adding more pasta water if needed. Drain the pasta, toss it with the almond pesto, sprinkle with the remaining almond flakes, and garnish with basil leaves before serving.
