Ingredients

  • 400 g penne
  • 400 g Straw tomatoes
  • 2 Tomatoes
  • 400 g mini mozzarella balls
  • 2 cloves garlic (finely chopped)
  • juice of one lemon
  • 2 tbsp white wine vinegar
  • 4 tbsp olive oil
  • 100 g sun-dried tomatoes (in oil)
  • 1 bunch parsley (chopped)
  • Salt
  • pepper (ground)
  • 1 pinch sugar

Instructions

    Cook Penne in plenty of salted water until al dente. Rinse with cold water and drain well.

    Heat tomatoes, peel, quarter, seed, and dice them.

    Slice mozzarella into rounds.

    Chop sun-dried tomatoes.

    Wash and halve straw tomatoes.

    Combine tomato cubes, sun-dried tomatoes, straw tomatoes, mozzarella, and garlic in a bowl. Add lemon juice, parsley, vinegar, and olive oil; season with salt, pepper, and sugar. Fold in Penne and let rest for 30 minutes. Taste before serving.
