Ingredients

  • 150 g arugula
  • 400 g cherry tomatoes (red and yellow)
  • 2 Avocados
  • 1 Red Onion
  • 1 Garlic clove
  • 2 tbsp lemon juice
  • 2 tbsp white balsamic vinegar
  • 6 tbsp Olive oil
  • Sea salt
  • chili flakes
  • black pepper (freshly ground)
  • 250 g jumbo shrimp (pre-cooked)
  • 100 g black olives (pitted)
  • 1 tbsp capers

Instructions

    Wash and dry the arugula. Wash and halve the tomatoes. Peel, halve, pit the avocados and cut the flesh into pieces. Peel, halve and slice the onion.

    For the dressing, peel and finely chop the garlic. Mix with lemon juice, balsamic vinegar and 4-5 tbsp olive oil; season with sea salt, chili flakes and pepper.

    Rinse the shrimp, pat dry and sauté in the remaining oil for 2–3 minutes. Season with salt and pepper.

    Combine all prepared salad ingredients with the shrimp, olives and capers; toss with the dressing, taste, and serve on plates.
