Ingredients
- 400 g spiral pasta
- 2 tbsp white wine vinegar
- Salt
- Pepper (freshly ground)
- 1 tbsp liquid honey
- 1 tsp grated lime zest
- 1 tbsp lime juice
- 4 tbsp olive oil
- 200 g small mozzarella balls
- 1 honeydew melon
- 60 g Parma ham thin slices
- basil for garnish
Instructions

Cook the pasta in plenty of boiling salted water until al dente, then drain and rinse under cold water. Mix the vinegar with salt, pepper, honey, lime zest and juice, whisk in the olive oil. Drain the mozzarella and fold about two‑thirds of the dressing into the pasta.

Quarter the melon, peel, core and use a melon baller to scoop out the flesh. Add the remaining dressing and the melon balls to the pasta and season to taste.

Serve the salad in bowls, garnished with ham slices and basil leaves.
