Pasta Salad with Arugula and Vegetables

Ingredients

  • 400 g spaghetti
  • Salt
  • 2 yellow bell peppers
  • 500 g tomatoes
  • 2 handfuls arugula
  • 1 handful coriander leaves
  • 1 clove garlic
  • Sea salt
  • 4 tbsp white balsamic vinegar
  • 1 tbsp Lemon Juice
  • 5 tbsp olive oil
  • 4 tbsp vegetable broth
  • a pinch sugar
  • pepper (ground)
  • 60 g black olives (pitted)

Instructions

    Cook the spaghetti in salted water until al dente. Drain and rinse with cold water.

    Wash, trim, and slice the bell peppers into thin rings. Wash the tomatoes, remove stems, and cut into wedges. Wash and tear the arugula and coriander into small pieces.

    Peel and finely chop the garlic. Combine with sea salt and grate lightly. Mix in balsamic vinegar, lemon juice, olive oil, and vegetable broth; season with sugar, salt, and pepper. Fold in the olives and remaining salad ingredients, then serve on plates.
