Ingredients

  • 400 g pasta (e.g., fusilli)
  • Salt
  • 2 bell peppers (green and red)
  • 1 cucumber
  • 50 g black olives (pitted)
  • 100 g hard cheese (e.g., Gouda)
  • 60 g salami
  • 2 tbsp Apple cider vinegar
  • 2 tbsp lemon juice
  • 1 tbsp honey
  • 4 tbsp plant oil
  • black pepper (ground)
  • grated Parmesan (for sprinkling)

Instructions

    Cook the pasta in salted water until al dente. Drain, rinse briefly with cold water and let cool.

    Wash, trim and slice the bell peppers into strips. Wash the cucumber, halve lengthwise and cut into slices. Slice the olives as well. Dice the cheese and salami. Whisk together vinegar, lemon juice, honey and oil; season with salt and pepper.

    Combine all prepared salad ingredients, sprinkle with parmesan and serve.
