Ingredients

  • 400 g spelt whole wheat spaghetti
  • Salz
  • 250 g zucchini
  • 1 Garlic clove
  • 250 g Cherry Tomatoes
  • 3 sprigs thyme
  • 3 EL olive oil
  • 50 ml Vegetable broth
  • 0.25 TL chili flakes
  • 40 g Parmesan

Instructions

    Cook the spaghetti according to package instructions in salted water until al dente.

    Meanwhile, wash and trim the zucchini, slice lengthwise into thin strips. Peel and finely chop the garlic. Wash and pat dry the tomatoes. Rinse the thyme, shake off excess moisture, and finely chop the leaves.

    Heat the oil in a pan, sauté the garlic and zucchini over medium heat for 2–3 minutes. Deglaze with vegetable broth. Add the tomatoes and cook together for another 2–3 minutes.

    Drain the spaghetti and combine it with the zucchini mixture. Season with salt and chili flakes. Divide onto four plates, sprinkle with thyme, and grate parmesan on top.
