Ingredients

  • 1 large onion
  • 2 Garlic cloves
  • 60 g dried tomatoes (pickled in oil)
  • 2 tbsp olive oil
  • 2 tbsp Tomato paste
  • 800 g peeled canned tomatoes
  • Salt
  • Pepper (freshly ground)
  • 1 tsp dried thyme
  • 1 tsp Dried oregano
  • chili flakes
  • 500 g penne
  • sugar
  • 40 g grated Parmesan
  • basil (for garnish)

Instructions

    Peel and finely dice the onion and garlic. Roughly chop the dried tomatoes. Sauté all together in hot olive oil until fragrant. Add tomato paste briefly, then add the canned tomatoes. Stir well, break down with a spoon, season with salt and pepper, and simmer gently for about 20 minutes. Finish with herbs and chili, cooking another 5-10 minutes to desired consistency.

    Cook penne in salted water al dente. Taste sauce with salt, pepper, and a pinch of sugar. Drain pasta, plate on bowls, pour sauce over, sprinkle Parmesan, and garnish with basil.
