Ingredients

  • 8 thin veal cutlets (≈80 g each)
  • Salt
  • Pepper (freshly ground)
  • 8 tsp tomato paste
  • 1 small red bell pepper
  • 1 green bell pepper
  • 100 g sliced ham
  • wooden skewers
  • 2 tbsp olive oil
  • 200 ml white wine
  • 1 sprig thyme
  • 1 tbsp capers

Instructions

    Lightly pound the veal cutlets, season with salt and pepper, and spread 1 tsp tomato paste on each.

    Quarter the bell peppers, clean, seed, remove white membranes, wash, and slice into strips. Arrange ham and pepper strips on the meat slices, roll up, and secure with a wooden skewer.

    Heat olive oil in a pan and brown the rolls all around. Deglaze with wine, add thyme, cover, and simmer for about 10 minutes. Add capers and season with salt and pepper to taste.

    Serve with steamed vegetables such as broccoli, carrots, or spinach.
