Parsley Olives

Ingredients

  • 1 Organic lemon
  • 2 Garlic cloves
  • 1 tsp mustard seeds
  • a pinch ground fennel seeds
  • 1 tbsp mixed chopped herbs (parsley, chives, basil)
  • 4 tbsp olive oil
  • 400 g green olives (pitted)
  • Sea salt

Instructions

    Wash the lemon thoroughly, dry it, and finely grate its zest. Cut the lemon in half and squeeze out the juice. Peel and finely chop the garlic.

    Crush the mustard seeds with a mortar, then add the fennel along with the garlic. Mix the garlic blend with the chopped herbs, olive oil, olives, and sea salt, and let it infuse for at least 2 hours.
