Ingredients
- 2 cloves garlic
- 3 tbsp white wine vinegar
- 1 tsp sharp mustard
- 2 tbsp crème fraîche
- 80 ml vegetable stock
- 5 tbsp olive oil
- Salt
- pepper (from grinder)
- sugar
- 2 tbsp freshly grated Parmesan
Instructions

Peel the garlic and blend with the vinegar, mustard, crème fraîche, stock, and oil in a blender until smooth. Season with salt, pepper, and a pinch of sugar.

Fold in the freshly grated Parmesan. Taste again and serve over fresh leafy salad.
