Paprika and savoy cabbage with lemon thyme: For low calories and fat, this dish provides the daily vitamin C requirement. Savory yet light, it shows how cabbage can taste vibrant.
Ingredients
- 200 g savoy cabbage (1 head)
- 30 g small onions (1 small onion)
- 100 g red bell pepper halves (0.5 red bell pepper)
- 100 ml classic vegetable broth
- 3 sprigs lemon thyme
- Salt
- Pepper
Instructions

Wash, trim and cut the savoy cabbage into thin strips.

Peel, halve and slice the onion into thin strips.

Wash, deseed and slice the bell pepper halves into strips.

Bring the onion strips with the broth to a boil in a small pot, cover and cook for 5-6 minutes.

Meanwhile wash the thyme, shake dry and strip leaves from two sprigs.

Add the cabbage and bell pepper to the broth, cover and simmer over low heat for another 8-10 minutes.

Season the vegetables with salt and pepper, plate on a dish and garnish with remaining lemon thyme.
