Kassler with Apple Sauerkraut

Ingredients

  • 2 red apples
  • 1 tbsp Lemon Juice
  • 1 onion
  • 2 tbsp butter
  • 1 tsp powdered sugar
  • 750 g sauerkraut (canned)
  • 150 ml dry white wine
  • 100 ml apple juice
  • Salt
  • ground pepper
  • 1 tsp paprika powder
  • 1 pinch ground caraway seeds
  • 1 bay leaf
  • 4 juniper berries
  • 8 thin slices Kassler (80 g each)

Instructions

    Wash the apples, quarter them, remove the core and cut into 1 cm pieces. Immediately mix with lemon juice. Peel and finely dice the onion. Heat butter in a pot and sauté the apple cubes. Sprinkle with sugar, allow slight caramelization, then add the onion. Stir in the sauerkraut and deglaze with wine and apple juice. Add the spices, season with salt and pepper, stir occasionally and cook over medium heat for about 20 minutes.

    Remove the spices from the kraut and arrange the Kassler slices on top. Cook for another 10 minutes.
