Ingredients
- 200 g basmati or long-grain rice
- Bell peppers (one red and one yellow each, cleaned, seeded, cut into small diamonds)
- 200 g cheese (Gouda, Emmental...), cubed
- 2 tbsp thyme leaves
- 2 tbsp white wine vinegar
- 5 tbsp salad oil
- Salt
- Pepper (freshly ground)

Wash the rice in a sieve under running water and bring to a boil with twice its volume of water, season with salt, cover and simmer over low heat until the liquid is absorbed by the rice. Let it cool slightly.

Whisk together the oil, vinegar, salt and pepper, then mix with the rice, thyme and bell pepper diamonds. Let it cool and rest, taste, and before serving sprinkle with cheese cubes.
