Cucumber Soup with Mint

Ingredients
- 4 salad cucumbers
- 1 handful mint
- 1 handful lemon balm
- 1 Avocado
- 1 lemon (juice)
- 300 g yogurt
- Salt
- ground pepper

Trim ends of cucumbers, peel, cut lengthwise in half and scoop out seeds. Roughly cube cucumber and place in blender. Rinse mint and lemon balm, shake dry, roughly chop leaves. Halve avocado, remove pit, loosen flesh from skin and add with herbs to blender. Blend everything, adding lemon juice and yogurt as you go. Pour about 200 ml cold water in and continue blending until soup reaches desired consistency. Season with salt and pepper and refrigerate until serving.
