Ingredients

  • 300 g small pasta (e.g., Ditali, small tubes...)
  • Paprika bell peppers (1 large yellow and 1 large red each)
  • 1 cucumber
  • 2 tbsp chives rings
  • 1 Shallot
  • 5 tbsp white wine vinegar
  • 0.5 tsp mustard
  • Salt
  • Pepper (freshly ground)
  • 0.5 tsp Sugar
  • 5 tbsp sunflower oil

Instructions

    Cook pasta in plenty of boiling salted water until al dente, drain, rinse with cold water and let rest.

    Wash, trim, halve, deseed, remove white membranes from peppers and dice very finely. Wash cucumber, cut off ends, peel, split lengthwise, scoop out seeds with a spoon and dice very finely as well.

    Peel shallot and dice finely.

    Whisk vinegar, mustard, salt, pepper and sugar together; whisk in oil until emulsified. Add shallot and taste. Mix pasta, vegetables and chives with the dressing, cover and refrigerate for 30 minutes.
