Paprika Omelette

Ingredients

  • 1 large red bell pepper (seeded and sliced into thin strips)
  • 1 bunch spring onions (trimmed and cut into ~7 cm pieces)
  • 3 tbsp olive oil
  • 1 clove garlic (pressed)
  • Salt
  • Pepper (freshly ground)
  • 100 ml Vegetable broth
  • 5 eggs
  • Tabasco sauce to taste
  • small wooden skewers

Instructions

    Sauté the pepper and onion pieces in hot oil, pour in vegetable broth, simmer for about 5 minutes, season with salt and pepper.

    Whisk together eggs, 1/2 tsp salt, pepper, and a few dashes of Tabasco. Pour into the pan with some hot oil to form an omelette, then cut into 16 segments, each topped with a bit of pepper and onion and secured with a wooden skewer.

    Arrange on a platter and sprinkle with green scallion rings.
