Ingredients

  • 200 g capellini
  • Salz
  • 200 g champignons
  • 4 Frühlingszwiebeln
  • 1 Knoblauchzehe
  • 5 Eier
  • 50 ml schlagsahne
  • 1 EL frisch gehackte petersilie
  • 2 EL Parmesan
  • Pfeffer (aus der Mühle)
  • 4 EL Olivenöl
  • Basilikum (für die Garnitur)

Instructions

    Cook the capellini in salted water until just al dente. Rinse and drain. Clean the mushrooms and slice them. Wash, trim, and cut the spring onions into slightly diagonal rings; set aside some green rings for garnish. Peel and finely chop the garlic. Beat the eggs with cream, parsley, and parmesan, seasoning with salt and pepper.

    Sauté the mushrooms with garlic in 2 tbsp hot oil for 1-2 minutes. Spread the pasta and spring onions over them and pour the egg mixture on top. Cook 3‑4 minutes over moderate heat until golden brown. Flip by placing a large plate over the pan, tipping the omelette onto it, then sliding it back into the pan with remaining oil. Brown the other side for another 3‑4 minutes. Transfer to a large plate and garnish with leftover spring onions and basil.

    Serve with fresh salad as desired.
