Ingredients

  • 2 yellow bell peppers
  • 2 red bell peppers
  • 1 fresh lemon
  • 0.5 tsp Coriander seeds
  • 4 tbsp olive oil
  • Salt
  • Cayenne pepper

Instructions

    Preheat the oven to 200°C (400°F) with top and bottom heat. Line a baking sheet with parchment paper.

    Wash, trim, and slice the bell peppers into strips. Peel the lemon all around with a sharp knife, then cut the flesh into pieces. Coarsely crush the coriander in a mortar and stir it into the olive oil. Combine the peppers and lemon with the oil mixture, season with salt and cayenne pepper, and spread on the baking sheet.

    Bake for about 15 minutes until tender, then serve warm or chilled as desired.
