Paprika-Kaiserschoten Salad with Ginger

Ingredients

  • 800 g mixed bell peppers (red, yellow and green)
  • 100 g Sugar snap peas
  • 4 Spring Onions
  • 2 cm ginger
  • 2 tbsp sesame oil
  • 1 tsp yellow curry paste
  • 100 ml Vegetable broth
  • 2 tbsp Light soy sauce
  • Salt
  • Pepper (freshly ground)
  • red basil (for serving)

Instructions

    Wash the bell peppers, halve them, remove seeds and membranes, then cut into strips. Wash the sugar snap peas, trim and optionally slice diagonally. Wash the spring onions, trim and cut diagonally into pieces. Peel the ginger and finely chop.

    Heat the oil in a pan and quickly sauté the vegetables. Stir in the curry paste and cook briefly. Deglaze with vegetable broth and simmer for 6-8 minutes. Season with soy sauce, salt and pepper.

    Serve garnished with basil.
