Ingredients
- 500 g white bread (stale)
- 4 tbsp olive oil
- 400 g cherry tomatoes
- 1 cucumber
- 6 Spring Onions
- 4 sprigs thyme
- 1 tbsp Lemon Juice
- 2 tbsp white balsamic vinegar
- 1 pinch sugar
- Salt
- Pepper

Cut the stale white bread into bite‑sized cubes and crisp them in 2 tbsp hot oil in a pan. Drain on paper towels.

Wash and halve or quarter the tomatoes. Peel, core, and cut the cucumber into pieces. Wash and trim the spring onions, then slice diagonally into rings. Rinse the thyme, shake dry, and pluck the leaves. Mix the lemon juice with the remaining oil, balsamic vinegar, sugar, salt, and pepper to taste.

Combine all prepared salad ingredients in a bowl and toss immediately before serving.
