Breaded Reindeer Schnitzel

Ingredients
- 8 small reindeer schnitzels
- Salt
- ground pepper
- 1 cup flour
- 1 tsp sunflower oil
- 2 Eggs
- 1 cup breadcrumbs
- 1 tsp grated thyme (and rosemary)
- 2-3 tbsp butter (for frying)
- 1 onion
- 200 g chanterelles
- 1 tbsp butter
- flour (to dust)
- 125 ml white wine
- 125 ml Vegetable broth
- white pepper (ground)
- parsley (for garnish)
Instructions

Wash the reindeer schnitzels under running water, pat dry, and season with salt and pepper.

Coat them in flour, then dip through beaten eggs, mix breadcrumbs with herbs, and bread the schnitzels.

Heat butter in a pan, brown the schnitzels on both sides until golden yellow, remove and keep warm.

Peel and finely dice the onion; clean and halve the chanterelles if needed.

Melt butter in a pot, sauté the onion, add the chanterelles, and steam briefly.

Dust with flour, deglaze with white wine, pour in broth, and simmer the chanterelles over medium heat for 8-10 minutes. Season with salt and white pepper.

Plate the reindeer schnitzels with chanterelles on hot plates, garnish with parsley, and serve immediately with potato croquettes.
