Ingredients

  • 650 g cod fillet
  • 2 tbsp lemon juice
  • 2 bunches spring onions
  • 500 g pickled bell peppers (skin removed, drained)
  • 2 tsp thyme leaves (chopped)
  • 200 g Cream cheese
  • 150 g crème fraîche
  • 3 eggs
  • 2 tsp paprika powder (sweet)
  • Salt
  • Pepper (freshly ground)
  • 2 tbsp olive oil
  • thyme sprig (for garnish)

Instructions

    Cut cod fillet into bite‑sized pieces, drizzle with lemon juice and season with salt and pepper.

    Wash and trim spring onions; slice the white and light green parts diagonally. Drain bell peppers in a sieve. Mix cream cheese, crème fraîche, eggs, thyme, paprika, salt, and pepper to make a sauce.

    Sear fillet pieces in hot oil in a non‑stick pan for about 1 minute per side. Transfer to a greased baking dish and cover with spring onions. Pour half of the sauce over the fish. Arrange bell peppers on top and pour remaining sauce. Bake in preheated oven at 180°C (356°F) for about 35 minutes. Remove, garnish with thyme, and serve.
