Paprika Chicken Skillet with Noodles and Sweet Chili Sauce

- 300 g wide rice noodles
- Salt
- 600 g Chicken breast fillets
- pepper (ground)
- 3 tbsp Sesame oil
- 2 Spring Onions
- 2 red bell peppers
- 2 Garlic cloves
- 1 red chili pepper
- 200 ml broth
- 4 tbsp soy sauce
- 3 tbsp Sweet-Chili-Sauce (pre-made)

Cook the noodles according to package instructions in salted water, drain and set aside.

Wash, pat dry, cut chicken breast into bite-sized pieces, season with salt and pepper, then quickly stir-fry in a hot wok with 1 tbsp sesame oil until browned; remove and keep warm. Wash, trim, dry, and slice spring onions diagonally into rings. Wash bell peppers, halve, deseed, and cut into thin strips. Peel garlic cloves. Wash chili, halve lengthwise, deseed, and slice into thin strips. Add remaining oil to the wok, briefly sauté spring onions and minced garlic, then add bell pepper and chili strips; stir-fry briefly. Deglaze with broth, season with soy sauce, sweet chili sauce, salt, and pepper, cover and simmer for about 6 minutes. Add chicken pieces and noodles, heat through, and simmer a few more minutes. Sprinkle with coriander leaves before serving.
