Papaya on Pickled Herring in a Jar

Ingredients

  • 400 g small papaya (1 small papaya)
  • 0.5 Organic lemon
  • 4 Spring Onions
  • 1 red chili pepper
  • 2 tbsp olive oil
  • Salt
  • Pepper
  • 640 g pickled herring fillets (8 fillets)
  • 4 sprigs dill

Instructions

    Halve the papaya, remove seeds with a spoon and peel the fruit. Dice the flesh into 1½ cm cubes. Juice half a lemon over hot water, grate the rind dry, squeeze out juice, and rub off the zest. Drizzle the papaya cubes with 1–2 tbsp lemon juice.

    For the dressing combine remaining lemon juice with zest, oil, salt and pepper. Cut herring fillets into pieces, mix with spring onions and chili, and distribute among four jars. Top with papaya cubes, pour dressing over everything, cover and refrigerate for about an hour.

    Wash dill, pat dry, strip off leaves. Garnish the papaya on pickled herring in a jar with dill fronds and serve.
