Panna cotta with Prunes

Ingredients

  • 4 sheets gelatin
  • 1 vanilla pod
  • 300 ml heavy cream
  • 200 ml Milk (3.5% fat)
  • 3 tbsp granulated sugar (30 g)
  • 8 prunes
  • 1 tsp ground cinnamon
  • 0.5 pomegranate

Instructions

    Soak the gelatin in cold water for a few minutes.

  2. 2.

    Split the vanilla pod lengthwise and scrape out the seeds with a knife.

  3. 3.

    Heat the cream, milk, sugar, vanilla seeds, and pod over low heat for about 5 minutes until it just begins to simmer. Remove the pod and take the pot off the stove.

    Squeeze out excess liquid from the gelatin sheets and add them to the cream mixture, stirring until fully dissolved.

    Wash, pit, halve the prunes, and sprinkle with cinnamon. Remove seeds from half a pomegranate.

    Rinse four molds with cold water, place three prune halves in each, pour in the cream mixture, cover, and refrigerate for at least 3 hours.

    Before serving garnish the panna cotta with the remaining prune halves and pomegranate seeds.
