Ingredients
- 500 ml heavy cream
- 6 sheets gelatin
- 1 Vanilla bean
- 6 tbsp sugar (more to taste)
- 2 tbsp lemon juice
- 400 g blackberries

Soak gelatin in cold water.

Bring cream with split vanilla bean and 4 tbsp sugar to a boil. Remove from heat and stir in pressed gelatin until dissolved. Cool while stirring occasionally (over an ice bath if desired). When the mixture starts to set, pour into glasses. Chill for at least 3 hours. For serving, place washed blackberries mixed with 2 tbsp sugar and lemon juice on top of the panna cotta.
