Ingredients

  • 375 ml passionfruit juice (from about 1 kg fruit, with about 2 tbsp seeds)
  • 4 sheets white gelatin
  • 40 g powdered sugar
  • 250 g whipping cream
  • 3 egg whites
  • 50 g sugar
  • 100 g low-fat yogurt
  • 100 g crème fraîche

Instructions

    Whisk the juice with powdered sugar. Soak gelatin in cold water for about 10 minutes, then melt it in a small pot until almost dry. Add a little juice, stir, and then fold into the remaining juice. Stir in the yogurt with the crème fraîche.

    Beat the cream to stiff peaks, whip the egg whites to soft peaks, and gently fold both into the mixture. Pour the batter into glasses, sprinkle some passionfruit seeds on top, drizzle 1 tsp of juice over it, cover, and refrigerate for 3 hours.
