Pancakes with Mirabelle Compote

Ingredients

  • 200 g whole wheat flour (e.g., emmer or spelt whole wheat flour)
  • 0.5 tsp Baking powder
  • 400 ml milk (3.5% fat)
  • 0.5 tsp Salt
  • 5 eggs
  • 600 g mirabelle plums
  • 30 g butter (2 tbsp)

Instructions

    Whisk flour, baking powder, milk, salt and eggs into a smooth batter and let rest for 15 minutes. In the meantime wash, halve, pit and chop the mirabelle plums.

    Place 400 g of mirabelle plums with a splash of water in a pot. Bring to a boil over medium heat and simmer until desired consistency is reached.

    Heat a little butter in a non‑stick pan and pour batter in portions. Press a few plum pieces into each pancake and cook for about 2–3 minutes on each side over medium heat. This uses the butter, batter and remaining plums efficiently. Serve pancakes on four plates with mirabelle compote.
