Pancakes with Apples and Vanilla Sauce

Ingredients

  • 2 Eggs
  • 750 ml milk (3.5% fat)
  • 200 g Spelt flour Type 1050
  • 4 apples
  • 1 orange
  • 2 tbsp whole cane sugar
  • 2 tbsp butter
  • 40 g orange marmalade
  • 2 egg yolks
  • 1 tbsp Cornstarch
  • 1 Vanilla bean

Instructions

    Whisk eggs, 400 ml milk and flour into a smooth batter. Let rest for 20 minutes.

    Meanwhile peel, core and chop apples. Wash the orange, halve it and juice. Add juice with 1 tbsp sugar to a pot and bring to a boil. Add apples and simmer covered over low heat. Stir in ½ tbsp butter and add orange marmalade. Briefly bring to a boil while stirring, then remove from heat.

    For the vanilla sauce whisk egg yolks with remaining sugar, cornstarch and about 50 ml milk. Split vanilla bean lengthwise, put it in the remaining milk and bring to a boil. Remove from heat and let stand covered for about 15 minutes. Discard the vanilla bean. Stir in the beaten egg yolks, return pot to low heat and gently warm the vanilla milk while stirring (do not boil). When the sauce thickens, remove from heat.
