- 600 g salmon fillet pieces (4 pieces)
- 200 g arugula
- 4 tbsp parmesan shavings
- olive oil (cold‑pressed)
- Salt
- pepper (ground)
- juice of one lemon

Clean the salmon fillets with a sharp knife, removing any dark spots that may taste rancid. Heat 4 tbsp olive oil in a pan and sear the salmon on both sides over high heat for about 1–2 minutes. Season with salt and pepper.

Wash and dry the arugula. Arrange the cooked salmon slices on preheated plates and drizzle with lemon juice. Place a small mound of arugula on each fillet, drizzle with 1 tbsp olive oil, sprinkle parmesan shavings, and serve immediately.
