Ingredients
- 125 g fine glass noodles (instant)
- 16 large shrimp (ready to cook)
- oil (for frying)
- 1 Egg white
- 2 tbsp lemon juice
- 2 tbsp Soy sauce

Mix lemon juice and soy sauce, drizzle over the shrimp and let marinate covered in the refrigerator for 15 minutes. Rinse the instant rice noodles with warm water and soak for about 10 minutes, then drain thoroughly. Remove shrimp from the fridge, pat dry and skewer individually on wooden sticks.

Whisk the egg white, mix it with the noodles by hand, and wrap a few noodles around each shrimp. Fry the skewers in hot oil for about 1-2 minutes until golden, remove, drain on paper towels, season with salt, and serve.
