Ingredients
- 2 duck breast fillets (350g each)
- Salt
- 2 tbsp oil
- 2 tbsp butter
- 2 strips untreated orange zest
- 1 garlic clove (peeled)
- 4 thyme sprigs
- 3 ginger slices
- ground pepper

Preheat oven to 100°C. Place a rack on the middle shelf and a drip tray underneath. Wash duck breasts, pat dry. Score the skin in a diamond pattern so fat renders and shape stays intact.

Season duck breasts with salt. Add oil to a cold pan and place fillets skin-side down. Heat over medium until hot and brown for 5-6 minutes. Flip meat side up and cook another minute.

Place duck breasts skin-side up on the oven rack and roast in the oven for 40-50 minutes, depending on desired doneness.

Melt butter in a pan. Add orange zest, garlic, thyme, and ginger. Remove duck from oven, toss in herb butter, and season with pepper. A vegetable side pairs well with this dish.
