Ingredients

  • 2 kg young fattening duck (1 young fattening duck)
  • 3 tbsp honey
  • 1 tbsp soy sauce
  • 1 lemon
  • Salt
  • Pepper
  • 1 tsp oil

Instructions

    Boil honey in 0.125 l water, let cool, then stir in soy sauce, lemon juice and zest, salt and pepper; brush the duck inside and out with this mixture. Cover well and marinate for several hours, preferably overnight.

    Secure the duck on a spit, brush with oil, and grill for 70–100 minutes. During the last 20 minutes, continuously brush with the remaining sauce.
