Pan‑fried turkey schnitzels with radicchio from Spoonsparrow is a quick and simple low‑carb dish!
Ingredients
- 600 g turkey schnitzel (4 pieces of 150 g each)
- Salt
- freshly ground pepper from the mill
- 0.5 lemon
- 2 tbsp Rapeseed oil
- 1 large radicchio
- 2 sprigs thyme
- 1 tbsp Olive Oil

Wash, pat dry, salt, and pepper the turkey meat. Squeeze lemon juice and drizzle over the schnitzels. Heat rapeseed oil in a large pan and fry each side for 2–3 minutes over medium heat until golden brown yet juicy inside.

Wash radicchio, pat dry, remove tough core, and separate individual leaves. Drizzle with 1 tbsp lemon juice to reduce bitterness.

Wash thyme, shake dry, pluck individual leaves, and add them at the end to the pan‑fried turkey schnitzels. Arrange on a plate, grind coarse pepper over, place radicchio beside, and drizzle with a little olive oil.
