Lebanese-Style Bulgur Salad

The Lebanese-style bulgur salad from Spoonsparrow tastes wonderfully fresh and is very filling.
Ingredients
- 300 ml Vegetable broth
- 200 g bulgur
- 2 red tomatoes
- 2 yellow tomatoes
- 1 bunch flat-leaf parsley
- 1 bunch Coriander
- 1 Red Onion
- 3 tbsp Lemon juice
- 5 tbsp olive oil
- Salt
- Pepper
Instructions

Bring the broth to a boil in a pot, add the bulgur and simmer on low heat for about 30 minutes until it has absorbed the liquid.

Wash the tomatoes, quarter them, remove seeds, and dice into small cubes. Rinse the herbs, shake off excess water, and roughly chop the leaves. Peel the onion and finely dice it.

Mix the cooked bulgur with the tomatoes, herbs, onion, lemon juice, and olive oil. Season with salt and pepper to taste. Serve the Lebanese-style bulgur salad in bowls.
